No Indian meal is complete without rice. I make variety of rice dishes like pulao (pilaf), biryani, jeera rice, curd (yogurt) rice. You may have seen my hariyali (green) pulao recipe. We also like to eat rice during our Hindu fasting (vrat) days when we only eat specific type of food which we call farali food. We are allowed to eat samo also called samai chawal or Barnyard millet. This recipe can be cooked for vrat (upvas) or for regular meal and needs very few ingredients. My grandkids loved it when they were infants. It can be cooked in less than 10 mins.
These millets (superfood) are packed with nutrients. It is very high in dietary fiber and protein. It is rich in antioxidants and low in carb and fat. It is gluten free. You can use these millets in preparing many dishes. I use it to make ambali (fermented porridge), dhokla, etc.
This dish serves 3 people.

Preparation time: 5 minutes
Cooking Time: 15 minutes
Ingredients:
1 cup sama chawal (barnyard millet)
1/4 cup peanuts
1 tbsp split cashews
2 green chilies chopped
1 tsp cumin
2 tbsp ghee
Salt to taste
Procedure:
1. Wash and soak sama chawal in little water for 15-20 mins. Remove water before cooking.
2. In a heavy bottom pan, add 2 tbsp ghee. Heat this on medium, then add cashew and peanuts. You can also add raisins if you like. When nuts are slightly brown, remove few nuts for garnishing. Then add cumin seeds and chopped green chilies in the same pan. If you are making for regular meal, then add curry leaves. Add soaked sama chawal and roast for 1-2 mins. You can add salt and 3½ water. Cook on medium heat with open lid until it starts boiling. Then cover the lid and cook on low heat for few more minutes. It won't take long (around 5-7 mins) and you will notice water will be absorbed. Check if millet feels too dry or not cooked then add little water and cook additional 1-2 mins. Let it sit for 5 mins covered with lid.
3. Then garnish with rest of the nuts and fried green chilies if you like.
4. Serve this with raita, ratalyacha kees, and farali cucumber salad . You can check out many vrat recipes here.
You will notice the aroma of chawal roasted in ghee and flavour of cumin will light up kitchen. You can add veggies of your choice if you are making this for regular meal. You can prepare very simple sama chawal for infants with just water and then add ghee or yogurt at the end. You can cook this very soft adding more water. These millets tastes amazing with some yogurt, salt and cumin powder. A must try! I am sure everyone will enjoy it!!
