That's the question we asked our resident experts this summer (because, yep, that's when food publications dream about November). Like a pile of raked leaves that you want to jump into, the answers grew and grew and grew. It's the potluck to end all potlucks. It's the Residentsgiving. Everyone is bringing a dish—from Carolina Gelen's on-the-fly yogurt dip to Mandy Lee's creamy kimchi gratin, Rick Martinez's roast turkey al pastor, and Samantha Seneviratne's chocolatey pecan pie. There's something for everyone. Which leads us to the most important question of all: What do you want to eat for Thanksgiving? | 3 Fantastic Recipes From the Newest Mushroom Cookbook Posted: 01 Nov 2021 12:00 PM PDT Mushroom lovers rejoice! This December a new cookbook showcasing the inventive home recipes of mushroom enthusiasts from around the country will be hitting the shelves. Fantastic Fungi Community Cookbook was compiled and edited by food writer and mushroom obsessive Eugenia Bone, who also contributed several recipes and educational essays to the book. The idea to create this community cookbook was born out of the idea to provide a mushroom cooking resource to accompany the eponymous documentary by Louie Schwartzberg. While there's no shortage of mushroom-centric cookbooks, Bone was inspired to create something different by tapping into the community that rallied around the documentary to create a cookbook that represented the diversity of fungi and those who forage for them. |
| Cuban-Chinese Arroz Frito Is a Reminder Of A Complex Past Posted: 01 Nov 2021 10:00 AM PDT Ask a Cuban-American for a traditional family recipe and you'll find a common source of laughter. After all, years of training as tiny sous chefs to our abuelas and mamas have taught us that Cuban food (largely considered a peasant cuisine in the culinary world,) is first and foremost about learning to adjust for which ingredients one might have on hand, as well as the preferences of who is cooking and eating. In fact, it seems that if there has ever been a rule to follow precisely when it comes to cooking a Cuban dish, it is to have a grasp of the history behind the meal you're about to serve, as it has had such an influence on your identity. While being encouraged to measure out cups of rice and seasonings for dishes like ropa vieja and Moros y Cristianos by handfuls and finger pinches, young Cuban-Americans learn the essential lessons of their island country's extensive, and often unexpected, past. For me, a first generation-American by way of my mother (she fled Cuba along with her parents and siblings during the Revolution,) the most impressionable lesson about our island country's culture lies in one of my favorite meals: arroz frito, a Cuban classic with Chinese roots. |

| The Flaky Fame of Baklava, Featured on 'The Great British Bake Off' Posted: 01 Nov 2021 08:25 AM PDT Baklava is beloved for its sweet syrup, crunchy nut filling, and thin, flaky layers of phyllo dough. This layered dessert originated broadly in the Ottoman Empire, but has since been widely accepted as a Turkish or Greek specialty. The one group of people who aren't a fan of baklava? The remaining contestants on The Great British Bake Off, who, this past week, were given the challenge of making baklava from scratch—including the phyllo pastry dough. "This particular recipe will push you to the limit. Don't waste any time," said co-judge Paul Hollywood. In just two hours and 45 minutes, contestants were expected to prepare baklava with phyllo pastry made using a traditional laminating technique and then layered with a pistachio-walnut filling and cut into a star design. From Our Shop What Is Baklava?There are always variations but traditional baklava is made with phyllo dough, honey-lemon simple syrup, and a spiced nut filling (usually walnuts, or walnuts and pistachios, as seen on GBBO). As the baklava bakes, typically in either a round or rectangular cake pan, the top of the pastry is brushed with melted butter, which helps it to become golden brown. It's generally served slightly warm or at room temperature, but Food52's Kristen Miglore finds that baklava straight out of the oven is life-changing. |

An exquisite box of shortbread cookies, a basket of peak-season sungold tomatoes, an epic care package from loved ones in Asia, artisanal salts and various pantry provisions, and big bags of homemade cereal just to name a few. Maybe it's because I've just always been an eager eater or maybe it's a testament to how the memory of taste is so powerful that the treats have left such an impression on me years later. Whatever the case, I'm a staunch believer that the best gifts are the ones you can eat, drink, slurp, and munch up right away, and I'm pretty sure you'd agree. |
