Tossed with Italian herbs and olive oil, this simple pan-fried potato dish is going to be a new dinner favorite. Serve them for breakfast or alongside a hearty dinner!

You can never go wrong with serving potatoes as a side. Everyone loves them! Whether they’re scalloped, mashed, or roasted potatoes, your family won’t be able to get enough!

Potatoes in a Frying Pan Recipe

I love potatoes in every form. There are so many ways to make them! (Find my full list here!) Although mashed and fried potatoes are always taking the spotlight, pan-fried potatoes are highly underrated and need their time to shine! These potatoes are super easy to prepare and have the most amazing flavor and texture! They cook to a beautiful golden brown and have a crispy skin but soft, tender inside. Pan frying potatoes really is one of the best ways to make them!

These potatoes smell SOO good when you’re cooking them, it’s hard not to taste test one or two. The earthy olive oil combined with (one of my all-time favorite flavor combinations) garlic rosemary is to die for! Honestly, these pan-fried potatoes are good on their own or even better served with eggs and bacon for breakfast! They also complement this ribeye steak perfectly! However you choose to complete your meal, pan-fried potatoes are one of the best side dishes out there. Your family will love them.

Everything You Need to Make Them

Have a big bag of potatoes that needs to be used? This is a great way to prepare them! You only need a few other simple ingredients to throw this incredible side dish together. Measurements for each ingredient can be found in the recipe card below.

  • Potatoes: There is no right or wrong type of potato to use here! I used Russet, also known as Idaho potatoes! Yukon gold potatoes work well too, they just have less starch content and will have a slightly different texture.
  • Olive Oil: Adds a fresh, earthy aroma and helps your potato slices cook up nicely. You can substitute this with vegetable oil or even butter if you’re wanting something more rich in flavor.
  • Italian Seasoning: You can use prepackaged Italian seasoning or make your own blend at home! This is my favorite combination of herbs like thyme, basil, oregano, and marjoram.
  • Garlic Powder: I mean, is there a better combination than potatoes and garlic? It adds the perfect savory flavor to each bite!
  • Rosemary: I love adding rosemary to hearty dishes because it gives them a subtle minty aroma. Rosemary also pairs incredibly well with the flavor of garlic.
  • Salt and Pepper: Boosts the overall flavor of the potatoes! If you’re looking for more heat, check out my tips section below for more spices you can throw in!

How to Make Pan Fried Potatoes

This tasty pan-fried potato dish only has 15 minutes of cooking time and is filled with so much flavor! I love how easy it is to prepare and make it all the time for my family.

  1. Preheat Skillet, Prep Potatoes: First, preheat your skillet to medium-high heat. Cut potatoes into 1-inch cubes.
  2. Combine Ingredients: In a bowl add your potatoes, olive oil, Italian seasoning, garlic, rosemary, salt, and pepper.
  3. Toss: Toss everything to coat in the seasonings.
  4. Pan Fry: Add to your skillet and cook for 15-20 minutes, or until tender and crispy. Top with fresh herbs as garnish and serve.

Tips and Tricks for Making Pan Fried Potatoes

Here are a few tips on how to get steakhouse-worthy potatoes! They’re so soft, tender, and absolutely irresistible!

  • Should I Soak Potatoes Before Frying? This is entirely up to you! Soaking potatoes in cold water removes excess starch and helps them become crispier. However, each time I’ve made these, they’ve turned out nice and crispy on the outside without soaking.
  • No Boiling Needed: The potatoes in this recipe are cut into small enough pieces so you don’t need to boil them beforehand. They’ll become nice and tender just cooked in the pan!
  • Add Spice: If you’re looking to turn up the heat a little bit, try adding a dash of smoked paprika or chili powder to your herb mixture.
  • Serve With: A good potato dish is always great served with chicken, pork, or steak! You’ll have to try these pan-fried potatoes with baked parmesan chicken, stuffed pork chops, and brown sugar garlic flank steak!

Storing Leftovers

Although pan-fried potatoes are best served fresh, you can keep them in the fridge for a few days and enjoy them later.

  • In the Refrigerator: To keep your potatoes from drying out, store them in an airtight container. Use within 3 days.
  • Reheating: I always like to reheat my potatoes over the stove on medium heat so that they keep that delicious, crispy outer layer. You can also reheat them in the air fryer for 2-3 minutes at 400 degrees F.

Buffalo Chicken Salad

This buffalo chicken salad is packed with fresh vegetables, feta cheese, and the perfect buffalo chicken. Layer this with some homemade dressing, and you’ll have your new go-to salad recipe!

Salads have quickly become my very favorite things to make because there are so many to choose from! A few of my favorites are this wedge salad, this California spaghetti salad, and this fresh antipasto salad recipe.

Buffalo Chicken Salad Recipe

This buffalo chicken salad recipe packs a punch and brings together the best of both worlds… Buffalo chicken and healthy and fresh lettuce. I love anything buffalo chicken flavored! This means that Superbowl parties and potlucks are some of my favorite gatherings because they always have buffalo chicken, whether that’s wings or dip. Everything is so good smothered in that classic sauce that can have a little kick to it!

Enter in this salad, and suddenly, I can have my favorite buffalo chicken flavors all year long. It doesn’t get much better than that! This salad has a fresh, cool taste with lettuce, carrots, celery, and ranch dressing. And then, the chicken not only adds protein and flavor, but it adds a bit of heat to every single bite. Trust me when I tell you that you cannot miss out on this dish! Because it’s just too good!!

Ingredients in Buffalo Chicken Salad

This salad is fresh and insanely delicious. You will never go back to anything else when you need a delicious salad on the fly! Check out the recipe card at the bottom of the post for exact measurements.

Buffalo Chicken

  • Boneless, Skinless Chicken Breasts: Cut these so that they are thin (or you can pound them thin) (cut thin or pounded thinner). If you want to make it more simple, then you can even heat up some precooked chicken tenders and then coat them with the sauce.
  • Ranch Powder Seasoning: This adds easy and delicious seasoning to the dressing.
  • Frank’s Hot Sauce: The hot sauce provides some heat. Use a little bit more if you want to crank that up a notch.
  • Honey: The honey helps with the texture and flavor.

Salad

  • Romaine Lettuce: Chop this up or rip it into bite size pieces.  
  • Grape Tomatoes: Even though these are small, you’ll still want to cut these in half. 
  • Carrots: Just buy a bag of matchstick carrots to make your life simpler!
  • Feta Cheese: You cannot ever go wrong adding feta cheese to a salad! You could substitute these for blue cheese crumbles as well.
  • Celery: Dice this up into small pieces.
  • Ranch Dressing: You can drizzle this with homemade ranch dressing or blue cheese dressing!

How to Make Buffalo Chicken Salad

This salad comes together quickly and easily! It’s a delicious lunch or mid-day snack! Make enough so that you can have leftovers the next day…

Buffalo Chicken

  1. Whisk Marinade: Prepare your marinade by combining the buffalo sauce, ranch seasoning, and honey. Whisk until combined.
  2. Coat Chicken: Place the prepared chicken in a sealable plastic bag, add the marinade, and move the bag around to coat the chicken. Then, allow it to marinate for 25 minutes or a few hours.
  3. Cook Chicken: Grill, cook it up on a skillet or frying pan or bake the chicken until the juices run clear. The internal temperature should reach 165 degrees fahrenheit.
  4. *TIP* I like to add extra buffalo sauce on top to give it an extra bold flavor!

Salad

  1. Assemble: To assemble your salads, divide the salad ingredients evenly between 2 bowls. Or, combine them all into a large bowl and then make one salad to share!
  2. Cut Meat: Slice the chicken and then add it to the salad.
  3. Drizzle: Top with ranch dressing or blue cheese dressing. You can even sprinkle it with a little salt and pepper to enhance the flavors. Enjoy!

Variations

You can change this buffalo chicken salad up so quickly with different toppings and mix-ins! Here are a few ideas that you can try.

  • Nuts: Try adding in some nuts. I like using almonds, pecans or walnuts!
  • Vegetables: You can add in some avocados, cucumbers, green onions or corn into this salad and it will taste amazing!
  • Greens: Feel free to use spring greens, regular spinach or baby spinach in this salad. They are all delicious!

How to Store Leftovers

If you have enough of this buffalo chicken salad to save for leftovers then I recommend storing the lettuce/vegetables and the dressing separately. Just add the dressing on when you are ready to eat again so that the lettuce doesn’t get soggy! Store everything in airtight containers in your fridge. They will last 2-3 days. Combine everything when you are ready to eat!

Drunken Noodles (Pad Kee Mao)

These drunken noodles (or spicy Thai noodles) are filled with delicious flavors! Coated in a perfectly savory sauce, these noodles will satisfy any Thai food craving!

If you love Thai food as much as I do, then you must try out this fantastic Thai basil beef, this amazing pad Thai and especially this slow cooker Thai peanut chicken. They are all so delicious. You will love them!

What are Drunken Noodles?

Drunken noodles are also known as Pad Kee Mao. This is a classic dish hailing from Thailand. It’s different from Pad Thai noodles because instead of a sweet flavor, it’s savory. This drunken noodles recipe is especially delicious because the flavor of onions, peppers, and garlic is mixed with delicious basil and the marriage of the flavors together is one of a kind.

The chili paste that is mixed in gives it a mild amount of heat but you can add in some more if you like your dish really spicy! The thing that I especially love about this recipe (aside from how good it tastes) is how simple it is to make. This is better than going out to eat at a Thai restaurant. You can have better than takeout food in the comfort of your own home without the hassle and cost of delivery!

What Ingredients are in Drunken Noodles?

Because this recipe hails from Thailand, there are a few unique ingredients. You can find them in the international aisle of your local grocery store or at any Asian market near you! Check out the recipe card at the bottom of the post for exact measurements.

  • Wide Rice Noodles: These are the perfect shape and size for this dish and are able to hold so much flavor in them!
  • Sesame Oil: You will cook up your vegetables in this giving them a slight flavor as they cook.
  • Onion: Slice your onion as thinly as you prefer.  
  • Garlic: You can mince up fresh cloves or use minced garlic instead. I would use about 2-4 cloves if they are fresh.
  • Fresh Ginger Paste: Ginger paste is more potent and fresh tasting than ground ginger.
  • Green Onions: Chop these up.
  • Red Bell Pepper: Make sure that your slices are uniform in size so that they cook evenly.
  • Fresh Thai Holy Basil Leaves: You can use regular basil if you don’t have Thai holy basil.
  • Thai Red Chili Paste: You can substitute sriracha or crushed red pepper flakes instead.
  • Optional Protein: Chicken, Shrimp, Beef, or Tofu (thinly sliced)

Sauce

  • Soy Sauce: You can use regular or reduced sodium in this recipe.
  • Oyster Sauce: This adds in a slight bbq flavor.
  • Fish Sauce: Fish sauce has a salty flavor.
  • Brown Sugar: The brown sugar adds in a sweet element to balance out the salt.

How Do You Make Drunken Noodles?

This Pad Kee Mao (also known as drunken noodles) is super easy to make! It takes a total of 20 minutes from start to finish which makes this a perfect and easy dish for those busy nights. Add in the protein of your choice to make this a little bit heartier!

  1. Whisk the Sauce: Combine all the sauce ingredients in a small bowl. Whisk together and set aside.
  2. Make Noodles: Prepare the noodles according to the package directions.
  3. Heat the Oil: Heat the sesame oil in a wok or large cast-iron type skillet over high heat.
  4. Cook Seasonings: Add minced garlic, chili paste, and fresh ginger paste. Cook for 20 seconds. 
  5. Add Vegetables: Add sliced onion and red pepper, and cook for 1 minute.
  6. Combine: Add green onion, noodles, and sauce. Stir and cook for 1 minute making sure the sauce coats the noodles.
  7. Add Basil: Remove from heat and immediately add the basil, and toss until it barely starts to wilt. Serve immediately and enjoy!

What is Thai Basil compared to Holy Basil and Regular Basil?

A common question that I get asked is if all basil types taste the same. The answer is no! Thai basil tastes like regular basil with a hint of anise flavor. This taste will be recognized if you are familiar with Thai food. This drunken noodles recipe calls for Holy basil which is very similar to regular basil and can be substituted with that.

How to Store Leftover Drunken Noodles (Pad Kee Mao)

We all know that takeout makes the best leftovers! And these homemade drunken noodles are no exception.

  • In the Fridge: Once your noodles have cooled then store them in your fridge in an airtight container. They will last for 2-3 days. When you are ready to eat them then you can reheat the noodles on the stovetop or in the microwave.

I am SO excited that this time of year has rolled around once again! These are the best summertime grilling recipes and they are some of my all-time favorites. There is something for just about anyone! Vegetables, meat, fruit, you name it, I have it! Not to mention the fact that i get to be outside in my backyard and enjoy the delightful sunshine while I cook. It really doesn’t get much better than that.

I have rounded up some of my best and most popular grilling recipes and put them all in one place. You can find your entire meal here from your entree, salads and any side dishes with all of these summertime grilling recipes. Don’t forget to fill up that propane tank on your outdoor grill so that as soon as the weather turns, you will be ready to go!

Grilling Tips:

Learn how to prepare your meat so that you can cook it to perfection and enjoy a perfect meal for all of your summertime grilling recipes!

  • Clean the Grill: Yes, you will want a clean grill before starting. Heat up the grill and then clean it off using a brush or a grill cleaning spray.
  • If the meat sticks: Try not to move your meat around on the grill too often. It is best to leave the meat cooking in one place and then flip it over to finish cooking it through. If the meat is sticking to the grill then leave it and it will unstick after it is finished cooking.
  • Don't squish the meat: When grilling it is tempting to lay the spatula on top of the meat and squeeze it down to see all the juices run out. Don't! This is all the fat and juiciness that you need for flavor and cooking.
  • Let it rest: Be patient and let the meat rest before cutting into it. This will help the meat hold tight to all the juiciness in the meat.
  • Cutting meat: When cutting the steak, remember to cut against the grain. The lines in the meat are the direction you want to find and cut opposite of those lines. This will enhance the flavor of the meat and keep it tender.

You have never seen a beautiful and equally delicious cake as this lemon blueberry cake! Elegant, delicious, and fit for any occasion, this cake will knock your socks off!

Lemon Blueberry Cake Recipe

Everyone likes cake! You start out with a small slice, and soon, you have eaten the whole thing! No? Is that just me? Well… This lemon blueberry cake just might change that for you! The flavors in it are slightly subtle so that they aren’t overwhelming, but at the same time, they are just enough to keep you wanting more! It’s pure heaven in your mouth, and you won’t resist coming back for that second (or third!) slice.

A cake that is moist and delicious is a winner in my book! This cake checks off those boxes and then some. This lemon blueberry cake looks delightfully fancy so that I can use it as a decoration at a baby shower or a party, but then it doubles as the food as well! Trust me when I tell you that you don’t want to miss this cake… It’s perfect for any occasion, and your guests will love it!

Ingredients to Make Lemon Blueberry Cake

This cake is a work of art! Anyone can make it as long as you stick to this ingredients list. Check out the recipe card at the bottom of the post for exact measurements.

Cake

  • Granulated Sugar:
  • Lemon Zest: You will need the zest from 2 large lemons.
  • Cake Flour: I used cake flour instead of all purpose flour because it cake it a better texture.
  • Baking Powder and Baking Soda: These help the cake to rise and get that soft texture.
  • Salt: This will enhance all of the flavors in the cake.
  • Buttermilk: If you don’t have any buttermilk on hand, don’t worry! You can make it with only two ingredients using this recipe here.
  • Lemon Juice: You can use the lemons that you got the zest from for the juice! Fresh is best!
  • Vanilla: Add a splash of vanilla to enhance the sweet flavors.
  • Vegetable Oil: If you are wondering what makes a cake moist, this is it!
  • Egg Whites: These will bind the ingredients together.
  • Blueberries: You can use fresh or frozen for this recipe.

Filling

  • Blueberry Jam: This creates the perfect texture for the filling.
  • Lemon Zest: This will add some fresh, bright flavor to the blueberries.

Whipped Lemon Frosting

  • Butter: I used salted butter that was softened to room temperature.
  • Powdered Sugar: This dissolves easily making the frosting smooth.
  • Lemon Zest: The more lemon zezt, the better! Having it in all 3 parts of the cake really blends them all together seamlessly!
  • Vanilla Extract: This adds a sweet flavor.
  • Heavy Cream: The cream will blend everything together creating the perfect consistency.

How to Make a Lemon Blueberry Cake

This cake takes a few steps but boy is it worth it! Soon you are going to be wanting to make all the lemon blueberry foods that you can get your hands on. It’s the best combo.

Cake

  1. Preheat the oven to 350°. Grease 2 8 inch round cake pans and set aside.
  2. In a small bowl combine the sugar with the zest of the lemons until fragrant.
  3. In a large bowl whisk together the lemon sugar, 2 cups of the flour, baking powder, baking soda, and salt.
  4. To the same bowl add the buttermilk, lemon juice, vanilla, and oil and beat with the paddle attachment of a stand mixer or a hand mixer just until fully combined.
  5. In another bowl whip the egg whites until medium stiff peaks form. Then, fold ⅓ of the egg whites into the cake batter to loosen it up, followed by the remaining egg whites. Fold until only a few streaks of egg whites remain.
  6. Toss the blueberries with the remaining ¼ cup of flour. Fold into the cake batter until just combined.
  7. Separate the cake batter evenly into the two cake pans and bake for about 30-35 minutes, until a toothpick comes out clean and the center of the cake springs back when lightly pressed. Let cool completely before frosting.

Filling

  1. In a small bowl, combine the blueberry jam with the lemon zest. Refrigerate until ready to use.

Whipped Lemon Frosting

  1. Place the soft butter into the bowl of a mixer and use the paddle attachment to beat the butter for about 3 minutes, until it's a pale-yellow color.
  2. Add the powdered sugar and mix on low until it has been incorporated. Add the lemon zest, vanilla, and 3 tablespoons of cream. Beat on medium-high for about 3 minutes, until light and fluffy. Then, scrape down the sides and bottom of the bowl with a rubber spatula as needed.
  3. For a softer frosting, add more cream 1 tablespoon at a time until the frosting is the desired thickness. For this lemon blueberry cake, I recommend keeping the frosting stiff enough to form thick peaks to frost the cake.

Assembly

  1. Place one cake round top down on the plate or cake stand.
  2. Use a piping bag with a large round or star tip to pipe a dam around the edge of the cake to prevent the filling from coming out the sides. Fill the center of the well with the blueberry jam filling.
  3. Place the second cake round on top of the first, top down. Use the piping bag to pipe frosting all around the outside and top of the cake. Use an offset spatula to smooth the frosting. Top with fresh blueberries and then slices of fresh lemon.

Measuring the Flour

You definitely want to be extra careful in this lemon blueberry cake recipe to measure your flour correctly! Adding too much flour to this cake is a common mistake and can lead to a dry cake. is the most common mistake. Make sure that after you put the flour into your measuring cup that you use a knife to level it off.

How to Store Leftover Lemon Blueberry Cake

If you are lucky enough to have leftovers from this cake then you are in for a treat! This cake lasts for a few days and the leftovers taste delicious! Just store the leftover cake in a covered cake plate at room temperature. You don’t need to refrigerate it. In fact, that dries out the cake and takes away some of the flavor.
