Baked Zucchini Fries

Baked zucchini fries are crispy on the outside with a crunchy, seasoned crust and tender zucchini inside. It’s hard to stop after just one!

Fries are a quick and easy appetizer or side dish! Try these crispy garlic avocado fries, parmesan herb asparagus fries, or best-ever baked parmesan garlic potato wedges. They are all just as addictive and delicious as these baked zucchini fries. You’ll love them!

Crispy Baked Zucchini Fries Recipe

Oh, zucchini season, how I love you! There are so many great ways to use up zucchini. (I have a full list of recipes waiting for you here!) But as a lover of all things fry-like and dippable, I couldn’t wait to try these low-carb zucchini fries. It is such a delicious and healthy alternative to french fries. And you are able to use up some of the zucchini in the garden!

I wasn’t expecting these zucchini fries to be so amazing! And the great thing is, I can enjoy them without blowing my diet. They had a great crunch on the outside and were soft and tender on the inside like a french fry. These were amazing dipped in marinara sauce but my boys loved them in ranch. Sauce lovers- I’ve added a few more amazing dips to try out with them below.

What You Need to Make Them

I love making these zucchini fries for my kids because they use such simple ingredients! Aren’t snacks that you can throw together without a grocery run the best?! Check out the recipe card at the end of the post for measurements.

  • Zucchini: You can use 3 small zucchini or 2 large zucchini. I usually go for smaller zucchini when I make these since they’re not as seedy and watery. This makes for crispier zucchini fries.
  • Panko Bread Crumbs: For that delicious crispy outer layer!
  • Parmesan Cheese: Adds delicious cheesy flavor to the coating.
  • Italian Seasoning: For extra flavor and aromatics. Try making this at home! I always like making seasonings from scratch to customize the flavor. You can find my full recipe here.
  • Seasonings: I used salt and garlic powder. Feel free to switch this up! A pinch of cayenne or paprika is great for adding a bit of heat to the coating.
  • Flour: Used for dredging. Flour makes the outside of the zucchini fries nice and crispy.
  • Eggs: Help the breadcrumbs stick.
  • Water: Added to the egg mixture to thin it out.

How to Make Zucchini Fries

These fries need a bit of prep, but it’s well worth it for that tasty outer layer! The egg mixture is what’s going to help them crisp up perfectly in the oven.

  1. Preheat Oven, Prep Zucchini: Preheat the oven to 425 degrees F. Slice the zucchini into sticks.
  2. Coat With Flour: Add the flour to a bag with the zucchini and shake it to coat them.
  3. Bread Crumb Mixture: In a medium bowl stir together the Panko, parmesan, Italian seasoning, garlic powder, and salt.
  4. Whisk: Add the eggs and water to a small bowl and whisk them together.
  5. Coat With Bread Crumb Mixture: Remove the zucchini sticks from the bag and dip them in the egg mixture then into the Panko.
  6. Transfer to Baking Sheet: Place them on a baking sheet with parchment paper and spray them with olive oil.
  7. Bake and Enjoy: Bake for 12-15 minutes or until golden and crispy.

Tips for Making the Best Zucchini Fries

You can easily perfect your zucchini fries by keeping these simple tips in mind! They’re going to taste so good, you won’t be able to keep them around for long.

  • Do You Peel Zucchini Before Using It? You do not need to peel zucchini before slicing it. I prefer to leave the skin on the zucchini for that added crispy texture.
  • How Do You Make Zucchini Fries Crispy? Make sure to pat dry the zucchini when you are done rinsing it off. The smaller the zucchini, the crispier it will get. At the end of baking, switch to the broiler and broil the zucchini for 1 to 2 minutes. If you don’t have a broiler, pan fry the zucchini fries on top of the stove for a few minutes, flipping and turning them.

What Sauce is Good for Dipping Zucchini Fries In?

Storing Leftovers/ Reheating

These fries don’t last long at our house. You may even want to make extras with that summer zucchini crop! If (by some slim chance) you do have leftovers, good news- these zucchini fries are perfect for storing and enjoying later.

  • In the Refrigerator: Once they have cooled off from baking, place your zucchini fries in an airtight container or Ziploc bag. Seal and place in the refrigerator for 2 to 3 days, reheating when ready.
  • In the Freezer: You can freeze your zucchini fries once they are baked. Wait for them to cool, then place them in an airtight container or Ziploc baggie. Reheat when ready. You do not need to thaw the zucchini fries prior to reheating them.
  • Reheating in the Microwave: Place on a microwave-safe plate and warm the zucchini 1 minute at a time.
  • Reheating in the Oven: Preheat the oven to 425 degrees Fahrenheit. Place on a greased baking sheet and bake for 12-15 minutes or until warmed through.

When the weather turns warm then you know that strawberry season is just about upon up. You can use strawberries in just about anything but some of my favorite recipes are strawberry tiramisu, these yummy strawberry cupcakes, and this delicious strawberry pretzel salad!

Strawberry Recipes

If you love strawberries as much as I do then this post is going to be your favorite! I looooove when it starts to get warm outside and the sun is coming out more! It means that SUMMER is coming and I am here for it!! Not only are there so many fun things happening with my kids and our family but the food is absolutely unbeatable! Fresh, delicious, and SOO GOOD, strawberries are one of my favorite fruits. I add them to just about anything and it instantly becomes better!

You would think that after all of these years that strawberry recipes would be old news but it’s just the opposite! I am constantly coming up with more and more ideas on what they would be good in. It just keeps getting better and better! I have rounded up all of my favorite tried and true recipes that I know that you will love! Ranging from delicious salads to sweet desserts, these strawberry recipes are the absolute best!

Strawberry Tips

The key to really good strawberry recipes must start with a really good strawberry! I have come up with some tips on how to pick them, how to store them, and a few more. These tips will help you out as you get a start on making all of these recipes! Enjoy!

  • Mold: When you are looking for strawberries at the store, there are a few things to look for. First, inspect the package and make sure that there is no mold on any of the strawberries. This spreads fast so if it’s on one, it will soon be on them all!
  • Color: After you’ve inspected them for mold, then, look at the color. Too dark means that they are very ripe and will probably have a few mushy spots. Too yellow near the top means that they are more tart. Get a clamshell filled with ones that are just red.
  • Leftover strawberries: I will have leftover strawberries that are too ripe to eat just plain. These ones are fantastic to put into this strawberry recipe for a smoothie or to use in jam!
  • How to freeze strawberries: If you find a great deal on strawberries at your grocery store then you should snatch them up! Once you get home wash them, cut off the green tops and slice them up. Place them on a baking sheet (make sure none of them are touching) and put them in your freezer for 1-4 hours until frozen. Then, take them out and put them in a sealed, airtight container or ziplock bag. Place them in your freezer and they can last up to 6 months!

Kale Caesar Salad

Hearty leafy kale greens add a beautiful texture to a classic Caesar salad. Topped with croutons, parmesan cheese and an irresistible homemade creamy Caesar dressing, this salad will leave you wanting to add kale to all of your salads.

Aren’t salads just the best? You can add them to just about any meal (or even have them as your main entree) and they go with just about everything! Check out my favorite antipasto salad, this strawberry salad or this delicious wedge salad!

What is Kale Caesar Salad?

Kale Caesar salad is a healthier twist on the classic Caesar salad. Leafy kale is considered a superfood packed with vitamins and minerals that are lacking in romaine lettuce. When you add in some homemade croutons, homemade Caesar dressing, and freshly grated parmesan cheese, this salad is taken to the next level!

The hearty and healthy benefits of this kale Caesar salad are amazing and make it that much better to pair as a side with any meal! I love that kale is so versatile because then I can put it in all sorts of recipes! I love it in this amazing potato dish, and adding kale to smoothies is definitely must! Even air-fried kale chips are a favorite around my house!

What Ingredients Make Kale Caesar Salad?

Classic Caesar salad always uses fresh romaine lettuce. The difference between a classic Caesar salad and a kale Caesar salad is the addition of kale! I love to combine the two greens together in this salad. Check out the recipe card at the bottom of the post for exact measurements.

Salad

  • Kale: Wash the kale and then you will want to chop it into bite-sized pieces. You ill love how complimentary kale is to the Caesar dressing.
  • Romaine Lettuce: Chopped romaine lettuce adds another delicious layer to this salad. I love the combination of romaine and kale.
  • Parmesan: Freshly shredded parmesan adds a nutty and salty addition to the salad. No Caesar salad is complete without parmesan cheese!
  • Homemade Croutons: I always like to use homemade croutons whenever I can but store-bought works as well for this kale caesar salad.

Caesar Dressing

  • Red Wine Vinegar: Vinegar is key to making a good Caesar dressing.
  • Lemon Juice: In my opinion, fresh squeezed is always best!
  • Mayonnaise: This adds a creamy texture to the dressing.
  • Parmesan Cheese: Grated parmesan gives a delicious taste!
  • Dijon Mustard: If you use just a little bit of dijon mustard, it will give it a creamy savory texture.
  • Garlic: You can use fresh garlic, minced garlic or even pressed garlic for this recipe. Whatever you prefer will work for this kale caesar salad. The garlic taste is a MUST!
  • Kosher Salt: This enhances the flavors in the dressing.
  • Cracked Black Pepper: Pepper helps balance out all the salty and savory flavors.
  • Olive Oil: Oil is the base of this dressing and brings all the ingredients together in a smooth and creamy result.

How to Make Kale Caesar Salad

Kale Caesar salad comes together so easily and it can all be prepared ahead of time. Once all of the ingredients are prepped and ready to go, you can toss it all together and enjoy it in no time at all.

Salad

  1. Chop: Remove the rib and stem from the kale leaves and chop into bite-sized pieces. 
  2. Wash: Rinse the kale with warm water and strain through a colander or salad spinner.
  3. Combine: Place the chopped kale and romaine into a large bowl.
  4. Add Cheese: Add the shredded parmesan then the croutons, on top of the greens.

Caesar Dressing

  1. Whisk: For the dressing, whisk together the vinegar, lemon juice, mayonnaise, grated parmesan, dijon mustard, and garlic.
  2. Add Olive Oil: Slowly add the olive oil in a steady stream and then whisk until thickened. 
  3. Season: Season with salt and pepper.
  4. Dress Salad: Pour the dressing over the kale caesar salad when you are ready to serve it then toss to coat the ingredients. You may not need all the dressing. Just add it on to your liking. Enjoy!

Tips For Preparing Kale

Kale can be intimidating if you’ve never used it before. Here are some tips to get the best results for your fresh kale caesar salad. These tips will help you get the best flavor and texture from your kale.

  • Types of Kale: There are about 7 different types of kale. The most common type found at any grocery store is called curly kale. Another common type you can find is called lacinato kale (also known as dinosaur kale or Tuscan kale). Any of these types work in this recipe.
  • Remove Rib and Stem: The rib and stem of kale are very bitter and fibrous. Always remove them before using kale in any recipe. To separate the kale leaves from their stalks, cut along the edge of the stalk with the tip of the knife, or tear the leaves away with your hands. 
  • Chop Smaller Pieces: When chopping kale leaves to cook or put into a salad then you always want to cut it up into smaller pieces. Kale leaves are sturdy and are much easier to work with and are more tender to eat when they are chopped smaller.
  • Massage The Kale: This is the trick to getting your kale to taste delicious! When using raw kale in a salad, massaging the kale will alleviate both its bitterness and toughness. Massaging the leaves will break down the fibers. In a large bowl, toss your kale leaves with a small amount of olive oil and vinegar (any flavor). Massage using clean hands for 1-2 minutes. This massaging process will make your kale caesar salad taste much better.

Storing Leftover Salad

Storing leftover salad is easy, you just have to store the dressing and the salad ingredients separately if you want to enjoy it later!

In the Refrigerator: You will want to store your kale, dressing, and cheese in separate containers in your fridge! The kale last about 3 days and the dressing will last up to 2 weeks! Make sure that everything is stored in an airtight container. Toss all of t e ingredients together in a bowl when you are ready to serve!

This Chocolate Zucchini Cake is a deep, dark chocolate cake that is topped with light and fluffy chocolate whipped cream! With 3 cups of zucchini, it is incredibly moist and you won’t even notice all the vegetables!

Chocolate Zucchini Cake

If you are a gardener and you’ve planted zucchini this year, you may be searching for about 500 different ways to use it! Zucchini plants are the gift that keeps on giving, and giving, and giving. It always makes everything so moist and delicious!

This chocolate zucchini cake is one of my favorite ways to use zucchini because it uses a good amount (a whopping 3 cups), and it is so rich, so moist, and has this incredibly deep dark chocolate flavor. I love to top it off with a light and fluffy chocolate whipped cream — it’s sweet and chocolatey but light enough that it really lets the cake shine. If you want something a little sweeter, the chocolate cream cheese frosting from these chocolate zucchini cupcakes would be a wonderful addition!

Ingredients in Chocolate Zucchini Cake

These ingredients make a moist, chocolately cake that will leave your mouth watering! Check out the recipe card at the bottom of the post for exact measurements.

Cake

  • Sugar: Add some sweet flavor to the base of the cake.
  • Buttermilk: You can use store bought buttermilk or you can make it easily at home using this recipe.
  • Eggs: I always use large eggs when I am cooking and baking.
  • Vanilla: Add a splash of vanilla flavor to the cake!
  • Flour: Level out the flour when you measure it out so you get just the right amount. I used all-purpose flour in this recipe.
  • Cocoa Powder: This is the ingredient that will give you that delicious chocolatey flavor.
  • Baking Soda and Baking Powder: These will help your cake to rise and become soft and fluffy.
  • Salt: The salt enhances the flavors of all of the other ingredients.
  • Zucchini: This adds all of the moisture into this chocolate zucchini cake! You will need at least 1 large zucchini or 2 small zucchini to make enough for this cake.

Creamy Chocolate Topping

  • Heavy Whipping Cream: This makes the topping so light and creamy!
  • Powdered Sugar: This adds a sweet flavor to the heavy cream and keeps the topping nice and smooth.  
  • Cocoa Powder: Make this a chocolate flavor with the cocoa powder!
  • Vanilla: The vanilla enhances all of the sweet flavors.

How to Make Chocolate Zucchini Cake

This cake is simple and delicious. It packs a punch with flavor and the texture is so soft and moist, that it’s to die for! Your family will go crazy over it!

Cake

  1. Prep: Preheat the oven to 350 degrees and lightly grease a 9×13″ pan (line with parchment paper if desired).
  2. Whisk: In a large bowl, whisk together sugar, buttermilk, eggs, and vanilla until smooth.
  3. Combine: Add flour, cocoa powder, baking soda, salt, and baking powder and stir until combined.
  4. Stir: Stir in zucchini, just until combined.
  5. Bake: Spread into prepared pan and bake for 30-34 minutes, until a toothpick inserted in the center comes out clean or with moist crumbs. Set the chocolate zucchini cake aside to cool to room temperature.

Creamy Chocolate Topping

  1. Combine: In a medium bowl, combine cream, sugar, cocoa, and vanilla.
  2. Beat: Beat with an electric mixer on low until incorporated, then beat on high until stiff peaks form.
  3. Spread: Spread over cooled chocolate zucchini cake and serve.

Variations on this Chocolate Zucchini Cake:

  1. Whole wheat flour: If you want to go a little healthier with this recipe, you can swap one cup of the flour for whole wheat flour and no one will notice.
  2. Add cinnamon: Add a teaspoon of cinnamon to the cake batter with the cocoa for a more traditional zucchini cake flavor.
  3. Chocolate Chips: Add a cup of chocolate chips to the batter before baking for extra melty little pockets of chocolate.
  4. Make it into a trifle: Cut into cubes and use a base for an easy trifle, with chocolate whipped cream and fresh fruit.

How to store this Chocolate Zucchini Cake

This cake is best to be eaten on the same day because it starts to get a little bit soggy after that because it’s so moist.

  • In the Fridge: Store this cake in an airtight container and it will last in your fridge for 1-2 days.
  • In the Freezer: You can freeze the cake (before you add on the whipped topping) as long as you wrap it in plastic wrap and then place it in an airtight container. It will last for about 3 months. When you are ready to eat it, let it thaw overnight in the fridge and then add on the whipped topping just before serving.
