Snacks, nibbles, munchies, who doesn't love a snack? Something little and savoury and full of flavour, there's always place for another snack in your life. Whether you're looking for a delicious little morsel to serve at aperitif time, or something savoury to nibble on to keep the hunger at bay, these little crunchy pizza crackers will fit the bill.
These are inspired by those little mini pizza bites you get in cardboard boxes in European supermarkets. Not only do these taste moreish and delicious but they're also super easy to make and can be flavoured however you please.
These pizza flavoured bites really are super tasty - lots of oregano and tomato flavour, a hint of garlic and the ability to add a sprinkle of dairy-free cheese should you choose. If you eat dairy then feel free to add normal cheese. Or if you avoid any kind of cheese, dairy or dairy-free, then these still taste super good - i've made them both with and without the dairy-free cheese, and I'm not sure which i prefer!
One of the keys to this recipe is to make the crackers thin enough that they come out crispy, so do following my recommendation for rolling out between two sheets of parchment for a nice thin biscuit. If you want to make little squares like I have, then using a pizza roller really helps to get even edges.

Dairy-free Pizza Crackers
dairy-free, egg-free, nut-free, soya-free, sesame-free, vegetarian and vegan
- 150 g plain four
- 1 tsp salt
- 1 tsp caster sugar
- 2 tsp oregano
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- 1 tbsp tomato puree
- 80 ml water
- 1 tbsp vegan parmesan cheese (optional)
- 1 tsp flaky sea salt (to scatter on top)
- 1 tsp extra oregano (to scatter on top)

Preheat the oven to 200 degrees Fan

Place the flour, salt, sugar, garlic powder and oregano into a bowl

Add the tomato puree, oil and water and mix to form a soft dough

Knead briefly to make a smooth dough

Roll out between two sheets of parchment until it's 2mm thick

Cut into squares, this is easiest with a pizza roller

Prick each square with a fork or cake tester

Brush with water and sprinkle over some flaky sea salt and more oregano

Scatter with vegan Parmesan if liked

Transfer to the lined baking sheet and bake for 12-15 minutes until golden.

These keep well for up to a week, if they last that long!
