While it wasn't anything super impressive, it stood out from the many noodle dishes that I had in Hainan. So when I found out that there's a small shop in Wuhan that sells Houan noodles, I knew I had to go for it. And I loved it! The bowl of noodles was topped with an insane amount of pork and pig intestine, and while the broth looks clear and light, it was extra peppery and reminded me of Singaporean bak kut teh.
