Third time the classic Changsha-style stinky tofu is appearing on the blog and if you noticed in the previous post, it appeared with the sesame/peanut paste. Of course, this was during the same street food hunt but both were distinctly different, both in terms of taste and texture. I looked up why this particular style of stinky tofu is black (the Taiwanese version is a normal golden brown) and apparently it's because the tofu is soaked in a marinade containing shiitake mushroom and black bean, resulting in its dark colour. Is it stinky? Hell yea, but as they say, smells stinky, tastes heavenly 😉
