Ingredients

Use a clear shot of the ingredients for this recipe, prepped, and labeled if necessary. Insert the ingredients into the list below, omitting quantities.

ingredients
  • Milk - You can use your regular milk. I used full fat. But anything works.
  • Turmeric - I used fresh turmeric. We get these throughout the year here in Singapore. So I clean, peel and grind it in bulk to use for 2 weeks to a month by freezing the remaining.
    • You can use turmeric powder too, try to source good quality organic ones.
  • Black pepper - or long pepper works. I use regular pepper. Have it as coarse powder in stock always to use when needed.
  • Panangalkandu - Also known as palm sugar candy. This is a must for me as it plays an important role as well in the drink.

See recipe card for quantities.

What is panangalkandu or palm sugar candy?

Palm sugar candy, known widely as panangalkandu in Tamil is a sweetener derived from Palmyra palm.

It is comparatively rich in nutrients than regular sugar. It is lower in GI and can be substituted in place of sugar in such drinks comfortably.

We even suck as such few for suppressing cough in the nights and gives instant relief.

Substitutions

  • Fresh Turmeric - instead of fresh, you can use turmeric powder.
  • Panangalkandu - Palm sugar candy - Just use your favorite sweetener.
    • If you are okay with warm milk, you can use honey.
  • Vegan - Replace the regular milk with plant based milk like almond and use agave or maple syrup for sweetening.

Variations

  • Add crushed cardamom as it is also rich in antioxidants, combats cough, cold symptoms.
  • A pinch of Cinnamon, dry ginger powders are good idea in this as they do add in Turmeric latte.
  • I like to add a small mustard size pachai karpooram as well to make it smell like masala milk.

Top tip

Bring to boil and simmer it after stirring. Otherwise it may overflow.

Add panangalkandu only after switching off the heat as there are chances of curdling when using in India milk. I do not have any problem here though with the milk we get here in Singapore as it has longer shelf life.
