Welcome to another of my classic recipes where I just put lots of leftover ingredients together to come out with something mouth-watering, even if I do say so myself! This dish is versatile to add/remove ingredients as you wish, but is a great way of using up fridge bits and I would happily buy the ingredients in again just to make this recipe as I enjoyed it that much. A tasty lunch or dinner - let me know what you think. A bright, well-balanced meal perfect for any time of the year.

Ingredients (for 2 people);

  • 100g smoked bacon lardons
  • 150g Polish / Smoked sausage, sliced
  • 300g (2-3 small) sweet potatoes, diced into chunks
  • 1 red onion, chopped
  • 100g Tenderstem broccoli, cut in half/three more manageable pieces.
  • 1/2 tbsp dried Marjoram (found with the herbs in most large supermarkets)
  • 1 tsp chilli flakes
  • 2 garlic cloves, chopped
  • 1 tsp smoked paprika
  • 200g passata/chopped tomatoes
  • Pickled red cabbage to garnish (optional)

Method (Approx. 20 minutes altogether);

  1. Place the sweet potato chunks into a microwavable bowl with a tablespoon of water and microwave for 6-8 minutes until tender. (Check after 6 minutes so they don't come out too soft).
  2. Using a large frying pan, heat up some olive oil on a medium heat and add in the chopped red onion.
  3. Once the onion is softened, add the garlic into the pan and fry for a further minute.
  4. Add the bacon lardons and the sausage to the pan until the bacon is all cooked through and beginning to crisp.
  5. Add the passata, marjoram, chilli flakes, smoked paprika and broccoli and cook the mixture for around 5 mins for the sauce to thicken and the broccoli to soften slightly, adding water if needed.
  6. Once the sauce has thickened and the broccoli is at a nice texture, add in the sweet potato and give everything a good mix up until warmed through.
  7. Serve with garnish of pickled red cabbage if you like.
